Looking for some good super bowl food ideas?
Id like to say Im a good cook and I dont want to order out any food. I wanted to do steaks and all the fixens but it will be to expensive for the amount of people Im having over (8 people). Just looking for intresting ideas that wont be to expensive (my budget is about $150). BYOB
How about using a theme by serving food related to both teams? Chicago is noted for its deep-dish pizza and Indiana produces soybeans, so why not make two dishes and let the guests pick which they like best (or let them have a little of both)? The ones I chose have an Italian theme and how can you go wrong with pizza and lasagna? Yummy!
Chicago-Style Pizza
Pizza Dough:
16 ounces water
1/8-ounce yeast
1/2-ounce salt
2 pounds bread flour
1/4 cup olive oil
1/4 cup cornmeal
Toppings:
2 cups tomato sauce, jar or homemade
2 cups shredded mozzarella
1/2 cup sliced mushrooms
1/2 cup spinach, shredded
1/2 cup grated Romano
1/2 cup sliced pepperoni
1/2 cup grated Parmesan
In a mixer combine the water and the yeast and allow the yeast to dissolve. Add the remaining ingredients except for the cornmeal and begin to mix the dough using a dough hook on low speed. Once a ball is formed mix on medium speed for 1 to 2 minutes until the dough becomes elastic and smooth. Remove from the mixer and place in a bowl coated with olive oil. Allow the dough to rest for approximately 4 hours. Once the dough is rested, place on flat surface and dust with some flour.
Preheat oven to 425 degrees F. In a deep baking dish or deep dish pizza pan, spread the dough using your fingers at the bottom of the pan and make sure to have enough dough to come up the sides of the pan approximately 1/2-inch high.
Begin by placing a layer of the mozzarella cheese on the bottom of the crust. Add the tomato sauce and all of the toppings. Place in the oven for 30 to 40 minutes until golden and crispy.
Serve pizza straight from the oven to the table.
Soybean Lasagna
Sauté 1 large chopped onion and 1 clove of minced garlic. Transfer these ingredients to a big saucepan and stir in 1 large can of tomatoes (use the liquid, too!) and 1 can of tomato paste. Fry some mushrooms (these are optional, so the amount is up to you) and add 'em to the pan, too. Then, lightly brown 2 cups of ground soybeans and mix them in. Bring the ingredients to a boil, reduce the heat, and let 'em simmer (covered) for 1 hour. (While the sauce cooks, add salt and pepper to taste.)
Meanwhile, cook and drain 1 pound of lasagna noodles. Pour some of the sauce into the bottom of a 9" X 13" baking pan, and add alternate layers of noodles, grated Parmesan cheese (1-1/2 cups, total), sauce, sliced mozzarella cheese (1-1/2 cups, all told) and dabs of ricotta cheese (about 1-1/2 pounds in all). Repeat the layers until your ingredients are used up, and top the lasagna with sauce and grated cheese. This Italian delight should be baked in a 350°F oven for 15 minutes...or until it's firm.
